Happy St. Paddy’s Day, everyone!
In honor of today and all things green I thought that I would post my recipe for my Banana Chocolate Chip Matcha Muffins. Phew – quite the name, right?
This recipe is super easy and pretty delish. It makes about 12 muffins when you are filling the muffin tray 3/4 (or more) full. Don’t worry, these don’t rise a lot so even if you fill your muffins cups almost all the way to the top it shouldn’t overflow when in the oven.
1 2/3 cups flour
1/2 tsp salt
1 tsp baking powder
1 TBSP Matcha powder
1/3 cup sugar
1 tablespoon brown sugar
1/3 cup melted butter
1 cup milk
1 tsp vanilla extract
1 mashed banana (the riper the better!)
chocolate chips (as many as you want) *optional*
Preheat oven to 350. Mix all dry ingredients in a medium size bowl. Mix wet ingredients in a medium size bowl. Add wet ingredients to dry ingredients and mix well. Stir in chocolate chips. Line muffin pan with liners or spray with baker’s joy (my usual method) and fill each cup 3/4 full (or more depending on amount of batter). Bake for 20-25 mins. If you poke the muffin with a toothpick it should come out clean. And there you have it! A tasty and healthy (ish) snack! These are best within 1-3 days and should be stored in an airtight container to keep the moistness. MOIST!
