Good morning! Hope everyone is having a great start to their Monday. We had a rough night last night – Cole was up a lot of the night and then basically woke up at 4:30 am. Woo! Happy Monday 🙂 lots of coffee for this mom this morning 😂 Anyways, I thought I would share a healthy banana pancake recipe with you this morning. A friend of mine had posted about this a while back but I’ve tweaked it a little bit. Cole LOVES these pancakes. But just an FYI before you make these – because there is no flour or anything like that in these pancakes, the texture is much different than a typical pancake. They are very moist. I’d call them moist cakes. Lol jk I would not call them that and I’m sure I just turned off a lot of people to these pancakes BUT I swear they are definitely a good alternative to your typical pancake.
1/2 tsp cinnamon
1/2 tsp vanilla
1/4 c wheat germ
pure maple syrup (optional)
spray pan with nonstick cooking spray. Heat pan over medium low heat. Pour batter and flip after a couple mins (batter doesn’t really bubble so you will just have to use your better judgement). Also, because of the different consistency of these pancakes they are a little difficult to flip. I do more of a flop over – meaning I never really lift the pancake off the pan… just kind of *flop* Once they are done I top mine with a little butter and maple syrup and some walnuts. Enjoy!
